The best product for filling cracks is 2 coats of cornice adhesive and a final coat of top coat. There are modern alternatives to traditional lime: there's something called Limelite which has the properties of lime but is much easier to work with. Plasterers have to know what they're doing with lime plaster it's nothing like modern gypsum plaster and anyone who says they can work with lime needs to be checked out to make sure they've been properly trained and understand it. The cracks in ceiling plaster might be due to the structural issue and settling. I live in 400 year old house btw (though to be fair, the ceilings were probably 'only' around a hundred years old) It will be much easier to repair these by over-boarding with plasterboard, skimming and decorating, before the ceilings begin to sag too much at which time, the whole original lath and plaster ceiling. Ironically, the original ceilings would probably have been fine with some TLC.
